PIZZA AL PADELLINO

Each pizza maker must bring their own small pan. Double-baking is permitted, provided it is completed within the total time allotted for the competition (17 minutes). Before the competition begins, each contestant must stretch their pizza dough in the presence of the judge at the oven, allowing for a duration consistent with the desired level of fermentation. They will have 5 minutes to perform the pre-baking step at the time slot selected during registration. Subsequently, they will be called upon to finish their pizza—a process to take place between 1.5 and 3 hours after the initial bake. The contestant will then have an additional 10 minutes to present the finished product.
